One thing we like to do when we start getting lots of eggs, is to scramble them. We even have this for dinner when we need something really quick. The key to avoiding a messy pan is ensuring you use lots of oil (we often use leftover bacon grease — adds extra flavour too!). We crack the eggs right in and add a couple of tablespoons of milk/milk alternative, and then — this is the fun part — add whatever you like! Lots of times we add salsa to the eggs, or chop up some veggies such as peppers, tomatoes, spinach or arugula. Dinner takes just minutes!
